Saliníssima Prata has been produced since 1955 at Fazenda Matrona, located in Salinas – Minas Gerais, by Lucas Mendes. The city of Salinas and five other local municipalities are part of one of the appellations of origin (DO) of Cachaça. The drink is followed by the Salinas fermentation recipe, using wild levers and distilled in stills. The ferment recipe is popularly known as “caipira ferment”. Therefore, distillation in stainless steel frames for less than 6 months is recommended.
